EASY CHOCOLATE CAKE


Chocolate Cake:
    • 3 cups flour
    • 1/2 cup cocoa powder (unsweetened)
    • 2 cups brown sugar
    • 1 tsp salt
    • 1 tbsp natural coconut vinegar
    • 2 tsp baking soda
    • 2 cups warm coffee
    • 2/3 cup extra virgin coconut oil OR light olive oil
    • 1 tbsp vanilla essence
    Instructions to make the Chocolate Cake:
    - In a bowl, whisk together all the your dry ingredients (flour, cocoa powder, sugar, baking soda, salt)
    - In another bowl, mix the wet ingredients (coffee, vinegar, vanilla essence, olive oil)
    - Then whisk all together into a batter. (It's fine for the batter to be slightly lumpy).
    - Preheat oven to 175˚C. Butter and spread flour or use oil paper on two 9" pans and divide the batter equally into both pans.
    - Bake for roughly 30-35 minutes or until a toothpick comes out clean.
    - Ensure the cakes have completely cooled on a cooling rack before adding the frosting.


    Chocolate Frosting:
    • 150g cream cheese (softened & roof temp)
    • 1/2 cup unsalted butter (softened & roof temp)
    • 2.5 cups powdered brown sugar 
    • 1/4 tsp salt
    • 1/2 cup cocoa powder
    • 1 tsp vanilla extract
    Instructions for the Chocolate Frosting:
    - Beat together the cream cheese with 1/2 cup butter with a hand mixer until creamy.
    - Add in the powdered sugar and cocoa (sifted) together with the salt. Mix until nice and smooth.
    - Add the vanilla essence and then it's ready to be added to the cake!
    - Add a generous layer in between the two cakes, and then spread it all over the cake to give it a rustic look!

    TIPS!
    * Cocoa powder - always sift when using, and use unsweetened cocoa powder
    * Sugar - brown sugar or white sugar can be used for this recipe
    * Warm coffee - use 1 tbsp Nescafe instant coffee for each cup of water
    * Oil - extra virgin coconut oil or light olive oil; do NOT use extra virgin olive oil
    * Cream cheese and butter - always use once softened, and at room temperature
