Ingredients: 1cup warm water (90-100 degrees F) 1 tbs sugar 1 tbs yeast 2 cups all purpose flour 1/2 cups atta flour 1 tsp salt 1 tbs oil  Instructions: - Activate yeast by adding sugar and yeast to the warm water. Keep aside for about 10mins or till it foams up. - Add flour, atta flour, salt into a bowl and mix well. - Once yeast is activated, pour into flour mixture and mix well till all flour incorporated. -  Add the oil and knead till it forms a soft dough but not sticky - Make it into a round smooth bowl. - Grease the same bowl or another bowl with oil , place the dough in it. Rub oil on it. Keep covered till it rises double. Around 11/2 hours to 2hours depending on the humidity and weather. - Once risen in double place on work table and slightly punch it , flatten out to a 1cm circle. -Cut into 6 equal parts. Roll into a balls and keep covered with cling film/ baking sheet/ clothe for 15 mins.  - Dust the work table with flour , and roll the ball about 1/2 centimete...

Mugubondibai - Mysore dhal halwa

Ingredients: 250gms dhal 200-250gms sugar (can lightly vary according to your liking) 150gms ghee 1 big onion 3 tbs finely chopped ginger 1 tsp ground cinnamon and cardamom  Pinch of salt 1tsp rose water Instructions: 1. Wash the dhal clean. 2. Add salt and bring to boil with 3cups of water. 3. Slice the onion, chop ginger finely. 4. Grind cinnamon and cardamom to a fine powder. 5. In a separate pan, heat ghee on medium low flame. Once heated, sauté the onion, ginger.  6. Once onions are a little transparent and changed in colour, add sugar and stir well till sugar melts.  7. Add the boiled dhal and keep stirring till it becomes slightly thick. There will be a resistance while stirring.  6. Turn off the heat, add rose water and cinnamon and cardamom powder and let cool.

Easy Appam Recipe

Ingredients:  2 cups rice flour 1 cup cooked rice 1 teaspoon active dry yeast 2 tablespoon sugar 2 cups water / coconut milk (your preference, but coconut milk tastes better!) Pinch of salt Instructions: 1. Mix all the ingredients (except salt) into a smooth batter. 2. Cover and let it rest for half an hour.  3. Add in a pinch of salt. 4. Heat an appam pan on medium heat. 5. Once the pan is heated up, add a ladle full to the pan and swirl it around in shape of an appam. 6. Keep till brown on sides, you could cover it to maintain the heat of the pan.

Tapioca Cake

INGREDIENTS: 1kg grated tapioca 2 eggs (beaten) 250g sugar 3 pandan leaves Thick coconut milk from 01 coconut. (add grated coconut to blended, and add water just before the top of the coconut in the blender) INSTRUCTIONS: - Peel and grate tapioca. Once grated, the weight should be 1kg.  - Add sugar and beaten eggs mix well until the sugar dissolved. - Squeeze pandan leaves into mixture till completely crushed. - Add coconut milk (strained) and mix. - Remove pandan leaves - Pour into a cake tray and smoothen the top, else uneven areas will burn faster.  - Bake in preheated oven at 180 degrees Celcius for 75 mins until top is golden brown. ** Do NOT over bake or else it will be dry.

Super Yummy Chocolate Chip Cookies

Preparation Time: 20 minutes Baking Time: 13-15 minutes Chilling Time: 30 minutes Servings: 10 large cookies Ingredients: For the wet ingredients you'll need: 60g unsalted butter (melted)  75g coconut sugar (or brown sugar) 25g white sugar 1/2 egg (well beaten; at room temperature) 1/2 tsp vanilla essence  1 tbsp maple syrup (15ml) For the dry ingredients you'll need: 100g flour 1/2 tsp cornstarch 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp teaspoon salt 1/2 cup chocolate chips *1/4 tsp is equivalent to a "pinch" with measuring spoon standards. How to Prepare: 1) You'll need two bowls to mix the wet ingredients and dry ingredients separately.  2) In one bowl, mix the melted butter and sugar. EASY CHOCOLATE CAKE

Chocolate Cake: 3 cups flour 1/2 cup cocoa powder (unsweetened) 2 cups brown sugar 1 tsp salt 1 tbsp natural coconut vinegar 2 tsp baking soda 2 cups warm coffee 2/3 cup extra virgin coconut oil OR light olive oil 1 tbsp vanilla essence Instructions to make the Chocolate Cake: - In a bowl, whisk together all the your dry ingredients (flour, cocoa powder, sugar, baking soda, salt) - In another bowl, mix the wet ingredients (coffee, vinegar, vanilla essence, olive oil) - Then whisk all together into a batter. (It's fine for the batter to be slightly lumpy). - Preheat oven to 175˚C. KIMBULA BANIS (AKA SUGAR BUNS)

Ingredients: 300g plain flour ½ tsp salt 1 tbsp butter / margarine 1 ½ tsp yeast ½ cup warm water + 3 tbsp 1 ½ tsp sugar For the sugar syrup: ½ cup water 2 tbsp sugar 1. Add the yeast to half cup luke warm water, and add 1 ½ tsp to a bowl and let yeast rise. 2. Once the yeast has risen, add it to the flour and add salt and butter. 3. Mix with a wooden spoon, then add 3tbsp water and mix with hand. 4. While kneading, add a little water and make sure it doesn’t stick to the bowl. Add some water to your hand and mix the dough well. 5. Take dough onto table top and knead it well for about 8 minutes. 6. Grease a bowl with some oil / butter and add the dough, cover with kitchen towel and leave until it’s double size.
