Tapioca Cake


INGREDIENTS:

1kg grated tapioca

2 eggs (beaten)

250g sugar

3 pandan leaves

Thick coconut milk from 01 coconut. (add grated coconut to blended, and add water just before the top of the coconut in the blender)


INSTRUCTIONS:

- Peel and grate tapioca. Once grated, the weight should be 1kg. 

- Add sugar and beaten eggs mix well until the sugar dissolved.

- Squeeze pandan leaves into mixture till completely crushed.

- Add coconut milk (strained) and mix.

- Remove pandan leaves

- Pour into a cake tray and smoothen the top, else uneven areas will burn faster. 

- Bake in preheated oven at 180 degrees Celcius for 75 mins until top is golden brown.

** Do NOT over bake or else it will be dry.
