Easy Appam Recipe

Ingredients:  2 cups rice flour 1 cup cooked rice 1 teaspoon active dry yeast 2 tablespoon sugar 2 cups water / coconut milk (your preference, but coconut milk tastes better!) Pinch of salt Instructions: 1. Mix all the ingredients (except salt) into a smooth batter. 2. Cover and let it rest for half an hour.  3. Add in a pinch of salt. 4. Heat an appam pan on medium heat. 5. Once the pan is heated up, add a ladle full to the pan and swirl it around in shape of an appam. 6. Keep till brown on sides, you could cover it to maintain the heat of the pan.

Tapioca Cake

INGREDIENTS: 1kg grated tapioca 2 eggs (beaten) 250g sugar 3 pandan leaves Thick coconut milk from 01 coconut. (add grated coconut to blended, and add water just before the top of the coconut in the blender) INSTRUCTIONS: - Peel and grate tapioca. Once grated, the weight should be 1kg.  - Add sugar and beaten eggs mix well until the sugar dissolved. - Squeeze pandan leaves into mixture till completely crushed. - Add coconut milk (strained) and mix. - Remove pandan leaves - Pour into a cake tray and smoothen the top, else uneven areas will burn faster.  - Bake in preheated oven at 180 degrees Celcius for 75 mins until top is golden brown. ** Do NOT over bake or else it will be dry.
