Super Yummy Chocolate Chip Cookies

Preparation Time: 20 minutes

Baking Time: 13-15 minutes

Chilling Time: 30 minutes

Servings: 10 large cookies


Ingredients:

For the wet ingredients you'll need:

60g unsalted butter (melted) 

75g coconut sugar (or brown sugar)

25g white sugar

1/2 egg (well beaten; at room temperature)

1/2 tsp vanilla essence 

1 tbsp maple syrup (15ml)


For the dry ingredients you'll need:

100g flour

1/2 tsp cornstarch

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp teaspoon salt

1/2 cup chocolate chips

*1/4 tsp is equivalent to a "pinch" with measuring spoon standards.


How to Prepare:

1) You'll need two bowls to mix the wet ingredients and dry ingredients separately. 

2) In one bowl, mix the melted butter and sugar. Ensure that the butter has cooled before you mix it, else it'll melt the sugar and won't have the crunchiness to the cookie! :)

3) Mix in half the egg and stir until well combined. Ensure the egg is beaten well before adding half of it to the recipe, to ensure yolk and white are well mixed and half the egg is used.

4) Add in maple syrup and vanilla essence and mix well.

5) In the second bowl, combine the flour, cornstarch, baking powder, baking soda and salt.

6) Mix the dry ingredients to the bowl with the wet ingredients gradually, until well combined

7) Fold in the chocolate chip cookies to the batter.

8) Cover with plastic wrap, and refrigerate for 30 minutes.

9) While it's in the fridge, pre-heat oven to 190C.

10) Once you take the cookie dough out of the fridge, make 10 evenly sized balls and make them taller than they are wide. (Almost oval shape?). Place these about 2 inches apart on a tray lined with baking paper.

11) Bake the cookies for 13-15 minutes, until the edges are golden brown and the center would still be soft. Let them cool, and after about 3 minutes, you could press in single chocolate chips to the top of the cookies for a better look! :D
